Simon Palmer

Simon Palmer is an emerging talent who has joined Beach Byron Bay from e’cco bistro where he was Head Chef. Prior to this, Simon came into his own working for Brisbane’s only three-hatted restaurant Urbane as well as Gerard’s Bistro.

In his role as Head Chef for Beach Byron Bay, Simon Palmer has fused the essence of Byron Bay with his love of seasonal regional produce, sustainably sourced local seafood and wood-fired cooking.
