At Fink, we are committed to making a difference and in collaboration with the University of Sydney in 2023, we conducted a global review on sustainability across our restaurants.
Restaurants generate significant carbon emissions because of the energy consumption required for cooking, refrigeration, and lighting, as well as the substantial environmental impact of their food supply chains and waste management processes.
These findings have empowered Fink to adopt sustainable practices to play a part in reducing our industry’s environmental footprint.
As one of Australia’s leading restaurant groups, we are dedicated to innovation, exceptional service, and sustainability, and we wanted to share the practical ways we are taking steps to implement change across the industry.
Problem: Using single-use plastics across the restaurants.
Solution: We evaluated the single-use plastics used in our restaurants and replaced cling film, gloves, and bin bags with Biogone’s landfill-biodegradable products.
Landfill-biodegradable plastics can be reused and recycled and biodegrade 90% faster than conventional plastics, reducing their environmental impact. These plastics capture methane produced during accelerated degradation in managed landfills, contributing to waste-to-energy production without breaking down into microplastics.
In addition, we have shifted to using reusable containers for food preparation and storage, moving away from disposable containers altogether.

Problem: Use of chemicals in cleaning operations.
Solution: We have invested in eWater, an electrolysed water system, which can replace 80% of our chemicals, including degreasers, all-in-one sanitisers, and floor cleaners. eWater is a safe and sustainable cleaning solution produced onsite using electrolysis technology, requiring only 0.1% salt, water, and electricity.
By reducing chemical waste and single-use plastics, eWater supports a circular lifecycle, minimises health risks making it a more sustainable choice.
Staff are also encouraged to bring their own spray bottles to use eWater at home further reducing the use of household chemicals and single-use plastics.

– Potential cost savings over time
Problem: Importing bottled water significantly increases the carbon footprint compared to using domestically sourced water. The extensive transportation required for imported water contributes to a footprint nearly three times larger than that of domestic alternatives.
Solution: We have partnered with an Australian water and sparkling water supplier and transitioned away from a long-standing partnership with an overseas brand.

Upcoming Initiative: We are developing comprehensive training programs to educate our staff on sustainability practices. This will ensure that every team member is equipped with the knowledge and skills to contribute to our sustainability goals.
