Quay
1999–2026
In 1988, it began as Bilson’s.
In 1999, Quay arrived.
Over the years, Quay became more than a restaurant. It was a destination, a room where milestones were celebrated, new experiences discovered, and memories made. Every dish, every service, every moment was shaped by a quiet commitment to excellence.
While Quay has since served its final guests and closed its doors, we warmly invite you to continue your culinary journey with our sister restaurants:
Bennelong Restaurant & Bar
at the Sydney Opera House
OTTO Ristorante
on Woolloomooloo Wharf
OTTO
in Brisbane’s South Bank
Beach Byron Bay
overlooking Clarkes Beach
A Message from Leon Fink
Dear friends,
On 15 February 2026, Quay served its final guests and closed its doors on Sydney Harbour.
Looking back, I feel immense gratitude. What began in 1988 and became Quay in 1999 grew into something far greater than I ever imagined. Under Peter Gilmore’s extraordinary leadership, and thanks to the many talented teams who shaped the restaurant over the years, Quay became a place of creativity, beauty, and unprecedented culinary success.
To everyone who joined us at the table, whether once or many times, thank you for being part of the story. It was a privilege to host your celebrations, milestones, and moments on the harbour.
While Quay has now come to an end, its legacy lives on through the people, the memories, and its place in Australia’s culinary history.
Looking forward, we warmly invite you to continue your culinary journey with our sister restaurants: Bennelong at the Sydney Opera House, OTTO Ristorante on Woolloomooloo Wharf, OTTO in Brisbane’s Southbank, and Beach Byron Bay. We would be thrilled to welcome you to dine with us again soon.
With heartfelt thanks,
Leon Fink
